Aussie Aussie Aussie Oi! Oi! Oi!

After nearly 7 years of being in Australia, I have taken the plunge and become an Australian citizen! It was such an emotional day! Tears and huge smiles!! It's weird to say I am Australian! I love it!  

In other news - on Friday Aaron and I will have been married 5 years! I do to know what's weirder!  Hehe 

So let's see what everyone is knitting/crocheting  and baking! 

I have taken the year off my 'famous' Hot Cross Buns:( I have been a bit stressed out lately, well more anxious. Plus with two kids it's just a lot of work to get dinner on the table at 6 ;) but since being here I have made banana bread 4 times!

This is my favourite recipient! It's moist and dence and light and fluffy all at the same time! And the coconut oil gives it a new depth of flavour.

  1. I still can't believe it's been 7 years since you went to Australia! It doesn't feel like it's been that long, but I know so much has happened in that time! Corey and I will have been together for 8 years in July, and I'm still trying to wrap my head around that!

    I'll have to give that recipe a try! I seem to have a constantly growing collection of bananas in my freezer! But, I just can't get behind this whole coconut oil trend. The voice of Julia Child won't let me stray away from butter! I usually just stick to my Mum's recipe, I could make it in my sleep and it tastes like home.

    I feel your pain with the unsuccessful hot crossed buns. I was just home last week for my Dad & Isabella's birthdays and made a cake I had never made before, in my sister's kitchen - which is not exactly set up for scratch baking - and it turned out terribly! The cakes didn't rise properly and turned out really dense, and the pastry cream didn't set the first time around so I had to re-do that. I should have just given up, and bought a cake. But my pride wouldn't let me... so I put it all together and served it to my family anyways. Needless to say, massive amounts of teasing followed. I'll have to bake something during next month's visit to redeem myself.

    I will post this week about my latest projects and adventures in the kitchen.

  2. Trust me I love love LOVE my butter! But I also love to keep my kids healthy :) So its half and half, but Nothing but butter! there is no such thing as margernie in this house hold! The coconut oil actually gives this loaf a nice flavour.. its really really yummy with the whole wheat and honey.
